Mary Burrows
 In 2020, Mary Burrows, together with her husband, Brett Burrows, relocated to East Lewis County with the goal of operating and enjoying the Celtic Elk Campground. This move marked the beginning of their active involvement in the local community and the agricultural landscape of the area.
The Celtic Elk Campground is not only a place for visitors to stay but also serves as a working farm. Among its residents are Jacob sheep, Yaks, and various poultry. Mary takes pride in offering campers guided tours of the farm, using these opportunities to educate guests about agriculture and farm life. Her dedication to the agricultural community is further demonstrated through her membership in the Lewis County Farm Bureau, where she contributes to local farming initiatives and connects with other agricultural professionals.
In 2025, Mary and Brett expanded their business ventures by purchasing the Celtic Spirits Speakeasy and the Irish Dreams Motel. Through these establishments, they have introduced new Irish cuisine and craft cocktails to East Lewis County, adding diversity and vibrancy to the local hospitality scene.
Mary is deeply committed to giving back to the community and supporting civil services. Her dedication is evident in her honored role as a member of the East Lewis County Chamber of Commerce Board of Directors, where she works to promote local business interests and foster community growth.
